Light and elegant on the palate, the floral notes are balanced by the sweetness of the licorice root, with a hint of vanilla that develops on the finish. The collected spirit rests in hand-picked first-fill Pedro Ximénez sherry casks where the natural sweetness and richness of the sherry absorbs into our gin. Crafted with meticulous care, this gin draws inspiration from the traditional Old Tom recipe, which dates back to the 18th century. Joe’s vision was inspired by his family’s rich farming history – from grandad Brian who was a ploughing contractor to father Michael who was a dairy and beef farmer, the McGirr family have been part of the fabric of Fermanagh for centuries. PERFECT WITH TONIC – Boatyard Double Gin is best enjoyed in a refreshing gin and tonic with a slice of fresh grapefruit.This double contact method, which Dutch genever distillers would term ‘dubbel gebeide genever’, results in a more pronounced juniper flavour. To finish the process a small amount of PX sherry is added to give our spirit a velvety smooth mouthfeel. Our Sloe Boat Gin has been made by steeping wild-harvested sloe berries for 6 months in our Double Gin. The spirit has pure water added to it before it is rested for a minimum of two weeks and then bottled at 46% ABV.
